Chemical formula: C3H8O3

Physical properties:

Molecular mass: 92.09 g/mol
Solubility: freely soluble in water, alcohol and ether.
Production:
Glycerin is produced by hydrolysis of fats and oils (triglycerides), or through a fermentation process using natural products.

APPLICATIONS

– Humectant: Glycerin is used to retain moisture in confectionery products such as cookies, candies and marmalades to prevent drying out and keep them soft.

– Sweetener: Glycerin is used as a sugar substitute in low-calorie and diet products because of its sweet taste and low glycemic index.

– Texturizer: Helps maintain the consistency of products such as sauces, creams and pastries, giving them a soft and smooth texture.

– Preservative: Glycerin is also used to extend the shelf life of some foods due to its moisture-retaining properties.

– Solvent: In the production of food additives, flavors and colors, glycerin is used as a solvent to ensure uniform distribution of ingredients.

– Beverages and alcoholic products: Glycerin is added to some alcoholic beverages and soft drinks to improve taste and provide softness.

– Technical food additives: Used in food additives to stabilize, preserve, and improve the overall appearance of products.
