Sodium citrate (E331) is a sodium salt of citric acid, widely used in the food industry as an acidity regulator, stabilizer and preservative. In powder or granule form, sodium citrate is white, odorless, with a slightly salty taste. It has high solubility in water and low viscosity.

APPLICATIONS
– Beverages: Used to regulate acidity in fruit juices, soft drinks, energy drinks. Serves as a stabilizer in carbonated drinks.
– Dairy products: Added during the cheese melting process to improve texture, prevent fat and protein separation. Used as an emulsifier in cream and dairy drinks.
– Confectionery: Regulates acidity in marmalade, jelly, lollipops and other sweets. Helps stabilize color and texture.
– Bakery products: Ensures stability of yeast cultures during fermentation.
– Meat and fish products: Used to increase color stability and consistency of processed products such as sausages and pâtés. Prevents oxidation of fats.
– Frozen Foods: Lowers the freezing point, preventing the formation of large ice crystals in ice cream, frozen desserts and prepared meals.
